Ingredients
  

For the Salad

  • 2 cups Romaine lettuce washed and chopped
  • 1 cup Black beans rinsed and drained
  • 1 cup Corn kernels fresh or thawed
  • 1 Red bell pepper diced
  • 1 Avocado diced
  • ½ cup Cherry tomatoes halved
  • ¼ cup Red onion thinly sliced
  • 1 Jalapeño pepper minced
  • ¼ cup Fresh cilantro chopped
  • cup Feta cheese crumbled

For the Dressing

  • 2 tablespoons Lime juice freshly squeezed
  • 2 tablespoons Olive oil
  • 1 teaspoon Ground cumin
  • ½ teaspoon Chili powder
  • to taste Salt
  • to taste Black pepper

Instructions
 

Preparation

  • Wash and dry the Romaine lettuce, chop into bite-sized pieces, and place in a large salad bowl.
  • Add black beans, corn, red bell pepper, cherry tomatoes, red onion, and jalapeño to the bowl and toss gently.
  • In a separate bowl, whisk together lime juice, olive oil, cumin, chili powder, salt, and black pepper.
  • Pour the dressing over the salad and toss until well-coated.
  • Gently fold in the diced avocado.
  • Sprinkle feta cheese on top and serve immediately or chill for up to 30 minutes.

Notes

Use fresh ingredients for the best flavor. Adjust spiciness to your taste by modifying jalapeño quantity.
