  • 4 large carrots peeled and grated
  • ¼ cup raisins for sweetness
  • ¼ cup walnuts chopped
  • ¼ cup fresh parsley chopped

  • 2 tablespoons olive oil as a base for the dressing
  • 1 tablespoon lemon juice for a zesty kick
  • 1 teaspoon honey or maple syrup to complement sweetness

Preparation Steps

  • Peel and grate the carrots until you have approximately four cups of freshly grated carrots.

  • Pour the dressing over the carrot mixture and gently toss to combine.

  • Serve in a large bowl or on individual plates, garnishing with additional parsley if desired.
