  • 1 lb shrimp peeled and deveined
  • 1 large mango diced
  • 1 large avocado diced
  • ½ cup lime juice freshly squeezed
  • 1 jalapeño finely chopped
  • ½ cup red onion finely chopped
  • salt to taste
  • fresh cilantro for garnish

  • In a medium bowl, combine the peeled and deveined shrimp with ½ cup of lime juice, ensuring all shrimp are submerged. Allow the mixture to marinate in the fridge for 15–20 minutes, until the shrimp turn opaque and slightly firm.
  • While the shrimp is marinating, dice the mango and avocado into small pieces, and finely chop the jalapeño and red onion. Place these fresh ingredients in a large mixing bowl.
  • Once the shrimp is opaque, gently drain excess lime juice and add the marinated shrimp to the bowl with the mango, avocado, jalapeño, and red onion. With a spatula, carefully mix all ingredients.
  • Taste your Mango Shrimp Ceviche and add salt to your liking. Transfer the ceviche to an elegant serving dish and garnish with freshly chopped cilantro.
