Ingredients
  

For the Shrimp

  • 1 pound large shrimp peeled and deveined
  • 1 tablespoon olive oil for marinating
  • 3 tablespoons fresh lime juice for zest
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the Bowl

  • 1 cup cooked brown rice or quinoa as a hearty base
  • 1 cup cherry tomatoes halved
  • 1 cup corn fresh or frozen
  • 1 whole avocado diced
  • ½ cup fresh cilantro chopped
  • to taste lime wedges for serving

Instructions
 

Preparation

  • Whisk together olive oil, lime juice, minced garlic, cumin, paprika, salt, and pepper in a medium bowl.
  • Add shrimp to the marinade and toss until well coated. Let marinate for 15-20 minutes.
  • Cook brown rice or quinoa according to package instructions, usually taking around 15-20 minutes.
  • Heat a skillet over medium-high heat and add olive oil. Add marinated shrimp in a single layer and cook for 2-3 minutes on each side.
  • Transfer cooked shrimp to a plate to rest.
  • Assemble the bowl with rice/quinoa, shrimp, cherry tomatoes, corn, and avocado.
  • Garnish with cilantro and serve with lime wedges.

Notes

For the best flavor, use fresh ingredients and pre-marinate the shrimp for optimal taste.
