  • 1 pound Italian sausage can substitute with ground turkey
  • 1 medium onion chopped
  • 1 medium bell pepper red or yellow preferred
  • 3 cloves garlic minced
  • 28 ounces crushed tomatoes the heart of the soup
  • 4 cups chicken or vegetable broth choose based on preference

For the Seasoning

  • 2 teaspoons dried oregano classic Italian flavor
  • 1 teaspoon dried basil fresh can be used if available

For the Pasta and Cheese

  • 8 ounces lasagna noodles broken into pieces
  • 1 cup ricotta cheese creamy richness
  • 1 cup shredded mozzarella cheese for gooey texture
  • ½ cup grated Parmesan cheese adds depth and umami

For Garnish

  • to taste fresh basil optional but recommended

Step-by-Step Instructions

  • In a large pot over medium heat, pour in olive oil and let it warm up. Add Italian sausage and cook until browned, about 5 to 7 minutes.
  • Drain any excess grease, then stir in the chopped onion and bell pepper. Sauté for about 5 minutes until they soften and become translucent.
  • Add minced garlic and cook for another minute until fragrant, stirring constantly.
  • Pour in crushed tomatoes and broth, stirring well. Add dried oregano and basil, then season with salt and pepper to taste. Bring to a boil.
  • Add broken lasagna noodles, reduce heat to low, and let simmer for about 10 to 12 minutes until noodles are tender.
  • Stir in ricotta, mozzarella, and Parmesan cheese until melted and creamy.
  • Ladle the soup into bowls and garnish with fresh basil if desired. Serve hot.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze in a freezer-safe container for up to 3 months.
