  • 8 oz sliced deli turkey breast preferably low-sodium
  • 1 cup hummus classic or favorite flavor

  • 1 cup baby spinach leaves loose packed
  • 1 cup shredded carrots or matchstick carrots
  • 1 small cucumber seeded and cut into matchsticks
  • 1 small red bell pepper thinly sliced

Optional Extras

  • ½ cup crumbled feta cheese optional
  • 2 tablespoon fresh parsley or cilantro finely chopped
  • 1 tablespoon fresh lemon juice optional
  • salt and black pepper to taste
  • 1–2 tablespoon olive oil optional for brushing tortillas

Step-by-Step Instructions for Turkey Hummus Roll Ups

  • Prepare the vegetables by rinsing and drying the baby spinach. Shred the carrots if not pre-shredded, slice the cucumber into thin matchsticks, and thinly slice the red bell pepper. Crumble the feta and chop herbs if using.
  • Warm the tortillas in a dry skillet over low heat for 15–20 seconds per side. Alternatively, microwave covered with a damp paper towel for 20–30 seconds. Brush with olive oil if desired.
  • Season the hummus by mixing it with lemon juice, salt, and black pepper until smooth.
  • Spread about ¼ cup of the seasoned hummus evenly across each tortilla, leaving a ½ inch border.
  • Layer 2–3 slices of turkey over the hummus.
  • Add a line of baby spinach, followed by shredded carrots, cucumber matchsticks, and red pepper strips. Sprinkle feta and herbs if using.
  • Roll the tortilla tightly but not too tight, starting from the edge with the filling.
  • Repeat the assembly for the remaining tortillas, being creative with the fillings.
  • Slice roll ups into 1–1.5 inch pieces or serve whole. Garnish with herbs if desired.
  • Chill wrapped in plastic for 20–30 minutes for cleaner cuts if slicing.
  • Serve on a plate or platter, optionally with extra hummus for dipping.
