Cooking Instructions

  • Preheat your oven to 300°F (150°C).
  • Heat 1 tablespoon of oil in a large pot over medium-high heat and sear the chuck roast for 4-5 minutes on each side.
  • Sauté chopped onions in the same pot for 3-4 minutes until translucent.
  • Stir in tomato paste, thyme, rosemary, salt, and black pepper, cooking for 1-2 minutes.
  • Pour in beef broth, mixing well while scraping the bottom of the pot.
  • Return the seared roast to the pot and add chopped potatoes and carrots around it.
  • Cover the pot and bake for 3-4 hours until the meat is fork-tender.
  • Remove from the oven and let the pot roast rest for 10-15 minutes before serving.

Notes

This dish tastes even better the next day, making it ideal for meal prep and leftovers.
