Cooking Steps

  • Heat the oil in a large pan over medium heat, add cumin seeds and let them crackle for about 30 seconds.
  • Add finely chopped onion and sauté for about 5 minutes until translucent.
  • Stir in garlic paste and ground ginger, sauté for about 1 minute until fragrant.
  • Add Kashmiri chili, coriander powder, and garam masala; cook for 2-3 minutes.
  • Introduce chicken and sauté for about 5-7 minutes until browned.
  • Reduce heat, whisk in yogurt, stirring for about 2 minutes until smooth.
  • Add water and season with salt; stir well to combine ingredients.
  • Cover the pan and simmer on low heat for about 1 hour.
  • Check the chicken for tenderness and adjust seasoning; serve hot with basmati rice or naan.

Notes

For best results, opt for boneless chicken thighs and ensure the oil is hot before adding spices. Whisk yogurt smooth to prevent lumps.
