Step-by-Step Instructions

  • Preheat your oven to 325°F (165°C). Gather your other ingredients.
  • In a large Dutch oven, heat olive oil over medium heat and sear lamb shanks for 4-5 minutes on each side.
  • Remove seared lamb shanks and set aside.
  • In the same pot, cook chopped onion for about 5 minutes until translucent.
  • Stir in minced garlic and cook for another minute.
  • Add chopped tomatoes and broth, then mix in oregano, cumin, and red wine vinegar. Bring to a simmer.
  • Return the lamb shanks to the pot, nestling them into the sauce.
  • Cover and braise in the oven for approximately 2 hours or until fork-tender.
  • Remove from the oven and adjust seasoning with salt and pepper if needed.

Notes

Allow the braised lamb shanks to rest before serving. Properly store leftovers in an airtight container for up to 3 days in the fridge or up to 3 months in the freezer.
