Instructions
 

Marinade and Cooking

  • In a mixing bowl, whisk together honey, juice from 2 limes, lime zest, minced garlic, ground cumin, salt, and pepper until smooth.
  • Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over the chicken, refrigerating for at least 30 minutes.
  • Rinse the jasmine rice under cold water. In a medium saucepan, bring chicken broth to a boil, add rice, cover, and simmer for about 15 minutes.
  • Preheat your grill or grill pan over medium-high heat for about 5 minutes.
  • Grill the chicken for approximately 6–7 minutes on each side until the internal temperature reaches 165°F.
  • In a medium bowl, combine diced avocado, red onion, cilantro, and olive oil.
  • Assemble the stack with jasmine rice at the base, topped with grilled chicken slices and the avocado mixture.
  • Serve with lime wedges on the side and garnish with fresh cilantro.

Notes

Allow the chicken to marinate longer for enhanced flavor. Rinse jasmine rice before cooking for fluffy results. Rest the chicken after grilling for juiciness.
