Ingredients
  

For the Blueberry Sauce

  • 1 cup fresh or frozen blueberries Use ripe berries for the best flavor!
  • 2 tablespoons granulated sugar or honey Adjust sweetness based on preference

  • 1 tablespoon lemon juice Brightens the flavors

For the Yogurt Bites

  • 2 cups Greek yogurt, plain or vanilla Full-fat or 2% is best for creaminess
  • 2-3 tablespoons honey or maple syrup Sweeten to taste
  • 1 teaspoon pure vanilla extract Adds depth
  • 1 pinch fine sea salt Enhances overall flavor

For the Crunch Factor (Optional)

  • ½ cup granola or crushed digestive biscuits Offers a delightful crunch
  • 2 tablespoons finely chopped nuts Choose your favorite
  • 1-2 tablespoons shredded coconut Adds a tropical flair

For Preparing the Molds

  • 1 tablespoon nonstick cooking spray or neutral oil Ensures easy removal of bites

Instructions
 

Making the Blueberry Sauce

  • In a small saucepan, combine the blueberries, sugar or honey, and water. Cook over medium heat for about 5–7 minutes, stirring occasionally.
  • Once the mixture looks jam-like, gently mash some berries to retain some whole for a colorful inclusion.

Thickening the Sauce (Optional)

  • Stir in the cornstarch mixed with cold water and continue cooking for an additional 1–2 minutes, stirring until slightly thickened. Allow to cool completely.

Preparing the Yogurt Mixture

  • In a medium mixing bowl, add Greek yogurt, honey or maple syrup, vanilla extract, and sea salt. Whisk until smooth and glossy.

Preparing Your Molds

  • Lightly mist the silicone molds or parchment-lined tray with nonstick cooking spray or oil.

Creating the Crunchy Base (Optional)

  • Combine the granola, crushed biscuits, chopped nuts, and shredded coconut with melted coconut oil or butter. Press into the bottom of each mold.

Incorporating the Blueberry Sauce

  • Gently fold half of the cooled blueberry sauce into the yogurt mixture, creating distinct swirls.

Filling the Molds

  • Spoon the swirled mixture into each mold over the crunchy base. Top with dollops of the reserved blueberry sauce and create additional swirls.

Freezing to Set

  • Place the filled molds in the freezer and let them freeze for at least 3–4 hours or overnight.

Serving Your Treats

  • Once frozen, pop out the yogurt bites or lift out the parchment and slice. Allow to sit at room temperature for about 3–5 minutes before serving.

Notes

Use fresh, ripe blueberries for the best flavor. Customize sweetness and allow bites to sit out before serving for creaminess.
