Ingredients
  

For the Chicken

  • 2 large chicken breasts boneless and skinless
  • cup hot honey adds sweet heat

For the Rice

  • 1 cup cooked jasmine rice fluffy and fragrant

For the Vegetables

  • 1 cup broccoli florets brings color and nutrition
  • 1 unit red bell pepper sliced
  • 1 small red onion sliced

For Seasoning

  • 3 tablespoons olive oil divided
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika

For the Marinade

  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar

For Garnish

  • Fresh cilantro
  • Sesame seeds
  • Lime wedges for serving

Instructions

  • In a small bowl, combine the hot honey, soy sauce, and apple cider vinegar. Marinate the chicken breasts in the mixture for at least 30 minutes, ideally 2 hours.
  • Prep the broccoli florets, slice the red bell pepper and red onion into thin strips.
  • Prepare the jasmine rice according to package instructions, about 15 minutes.
  • Heat 2 tablespoons of olive oil in a skillet. Remove chicken from marinade, season, and sear for 6-7 minutes per side until golden brown and cooked through.
  • Let the cooked chicken rest for 5 minutes before slicing it into strips.
  • In the same skillet, add remaining olive oil, sauté the vegetables for 5-6 minutes until tender.
  • Simmer the reserved marinade in a saucepan until slightly thickened, about 2-3 minutes.
  • Assemble the bowls with jasmine rice, sautéed vegetables, and sliced chicken, drizzling the marinade on top.
  • Garnish with fresh cilantro, sesame seeds, and serve lime wedges on the side.

Notes

For deeper flavor, marinate the chicken longer. Customize veggies to your preference for a personal touch.
