  • Start by rinsing 1 lb of baby carrots under cold water and set aside.
  • In a large pot, bring water to a rolling boil and add the prepared carrots. Cook for 5-7 minutes until tender, then drain.
  • In a skillet, melt 2 tablespoons of butter over medium heat, then stir in 3 tablespoons of honey, 1 teaspoon of salt, and 1 teaspoon of pepper. Cook for 1-2 minutes.
  • Add the drained carrots to the skillet and toss in the glaze for 3-5 minutes until evenly coated.
  • Remove from heat, sprinkle with fresh thyme, toss, and transfer to a serving dish.
