  • 1 pound Shrimp peeled and deveined
  • 1 pound Lobster Meat cooked and chopped
  • ½ cup Unsalted Butter for roux
  • ½ cup All-Purpose Flour essential for thickening
  • 2 cups Seafood Stock or chicken stock
  • 1 cup Heavy Cream for creaminess
  • 1 cup Frozen Mixed Vegetables
  • 1 medium Diced Onion
  • 2 cloves Minced Garlic
  • 1 tablespoon Old Bay Seasoning
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 cup Shredded Sharp Cheddar Cheese

For the Topping

  • 1 package Refrigerated Biscuit Dough
  • 2 tablespoons Fresh Parsley chopped

  • Preheat your oven to 375°F (190°C). Gather all ingredients and equipment, including a large skillet and a baking dish.
  • In a large skillet over medium heat, melt ½ cup of unsalted butter. Add 1 medium diced onion and 2 cloves of minced garlic, cooking for about 4-5 minutes until the onion is translucent.
  • Stir in ½ cup of all-purpose flour and cook for an additional 2 minutes to create a roux.
  • Gradually whisk in 2 cups of seafood stock, bringing it to a gentle simmer for about 5 minutes until thickened.
  • Add 1 cup of heavy cream, 1 cup of frozen mixed vegetables, 1 tablespoon of Old Bay seasoning, 1 teaspoon of salt, and ½ teaspoon of black pepper. Let simmer for 3-4 minutes.
  • Fold in 1 pound each of shrimp and cooked lobster meat, then stir in 1 cup of shredded sharp cheddar cheese until melted.
  • Pour the seafood blend into a large baking dish, filling about three-quarters full.
  • Open the biscuit dough package, cut each biscuit in half, and arrange evenly over the seafood mixture.
  • Place the baking dish in the oven and bake for 25-30 minutes until the biscuit topping is golden brown.
  • Let cool slightly before serving, and garnish with freshly chopped parsley.

Notes

Use fresh seafood for the best flavor. Ensure filling is not too watery to avoid soggy biscuits. Space biscuit pieces to allow for even cooking.
