  • 1 tablespoon red curry paste adjust based on spice preference
  • 1 tablespoon fish sauce

Step-by-Step Instructions

  • In a large skillet, pour in 1 ½ cups of coconut milk and place it over medium heat for about 5 minutes.
  • Once the coconut milk is bubbling, add 1 cup of diced chicken breast and sauté for 6–8 minutes until cooked through.
  • Stir in ½ cup of satay sauce, 1 tablespoon of red curry paste, and 1 tablespoon of fish sauce. Mix for about 2 minutes.
  • Reduce the heat to low and let the curry simmer for about 10 minutes, stirring occasionally.
  • Remove from heat and serve with rice, quinoa, or lettuce wraps.

Notes

Garnish with fresh cilantro or basil for extra flavor. Store leftovers in an airtight container for up to 3 days in the fridge.
