Ingredients
  

Spice Blend

  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon chili powder

Chicken

  • 2 pounds boneless, skinless chicken thighs

Sauce

  • 1 can coconut milk
  • 1 can diced tomatoes
  • 1 medium chopped onion
  • 1 medium diced bell pepper
  • 1 cup chicken broth

Seasoning

  • to taste salt
  • to taste pepper
  • optional fresh chili peppers or red pepper flakes

Preparation

  • Prepare the spice blend by combining the curry powder, ground cumin, ground coriander, turmeric, and chili powder in a small bowl.
  • Season the chicken by placing the boneless, skinless chicken thighs into the slow cooker and sprinkling the spice mixture over them. Rub the spices into the chicken.
  • Add the vegetables and liquids by pouring in the coconut milk, diced tomatoes, chopped onion, diced bell pepper, and chicken broth into the slow cooker.
  • Stir to combine all the ingredients in the slow cooker until well mixed.
  • Cover and cook on low for 4 to 6 hours, or on high for 2 to 3 hours.
  • Check for doneness; the chicken should be tender and easily shredded.
  • Serve the Slow Cooker Chicken Curry in bowls, garnished with fresh herbs if desired.

Notes

For best flavor, sauté the onions and bell peppers before adding to the slow cooker. Store leftovers in an airtight container for up to 3 days.
