  • In a large pot, heat ½ cup of vegetable oil over medium heat. Gradually stir in ½ cup of all-purpose flour, mixing continuously for about 20–30 minutes, until the roux reaches a deep brown color.
  • Add 1 large diced onion, 1 diced green bell pepper, 1 diced celery stalk, and 3 minced garlic cloves to the pot. Cook for about 5–7 minutes, stirring occasionally, until the vegetables soften.
  • Stir in 4 cups of peeled and deveined shrimp along with 1 tablespoon of Cajun seasoning, 1 teaspoon of salt, and ½ teaspoon of black pepper. Cook for about 3–5 minutes, or until the shrimp turn a lovely pink color.
