  • 1 medium eggplant cut into ½-inch cubes
  • 2 medium zucchinis diced
  • 1 each bell pepper chopped (red or yellow)
  • 1 medium onion diced
  • 4 cloves garlic minced
  • 4 cups ripe tomatoes peeled and diced (or one 14 oz can)
  • 1 cup vegetable broth
  • 1 cup water
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • ½ teaspoon crushed red pepper flakes optional
  • 2 tablespoons olive oil
  • salt to taste
  • black pepper to taste
  • ¼ cup fresh basil leaves chopped for garnish

Step-by-Step Instructions

  • In a large pot, heat 2 tablespoons of olive oil over medium heat. Once shimmering, add 1 medium diced onion and sauté for about 5 minutes until translucent.
  • Stir in 4 minced garlic cloves and cook for an additional minute until aromatic.
  • Add 1 chopped bell pepper and sauté for 3–4 minutes until softened.
  • Add 1 medium eggplant and cook for about 5 minutes, stirring occasionally.
  • Mix in 2 diced medium zucchinis, cooking for another 3 minutes until slightly softened.
  • Stir in 4 peeled and diced tomatoes, 1 cup of vegetable broth, and 1 cup of water; mix thoroughly.
  • Season with 1 teaspoon of dried thyme, 1 teaspoon of dried basil, and ½ teaspoon of crushed red pepper flakes. Add salt and black pepper to taste, then bring to a boil.
  • Reduce heat to low, cover, and let simmer for 30–35 minutes, stirring occasionally.
  • Taste the soup and adjust seasoning if needed. Optionally, blend for creaminess.
  • Ladle into bowls and garnish with ¼ cup of chopped fresh basil leaves.

Notes

Use fresh, seasonal vegetables for the best flavor. Avoid overcooking the veggies to retain texture.
