Step-by-Step Instructions for Paella

  • Begin by heating 1 tablespoon of olive oil in a large paella pan over medium heat.
  • Add 1 cup of diced chicken and 1 cup of sliced chorizo. Sauté for about 5-7 minutes.
  • Stir in 1 clove of minced garlic and 1 cup of mixed vegetables. Sauté for another 2-3 minutes.
  • Add 2 cups of Bomba or Arborio rice, stirring thoroughly for about 2 minutes.
  • Pour in 4 cups of broth and sprinkle in 1 teaspoon of saffron threads, bring to a boil.
  • Reduce to low, cover, and let it simmer undisturbed for 20 minutes.
  • Increase the heat towards the end of cooking to achieve the socarrat.
  • Remove from heat and let it rest, covered, for 5 minutes before serving.
