  • Season the chicken strips with salt and ground black pepper in a mixing bowl, ensuring each piece is evenly coated. Set aside to marinate for about 5 minutes.
  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat until shimmering, about 2 minutes. Add seasoned chicken strips and cook for 5-7 minutes until golden brown. Remove from skillet and keep warm.
  • In the same skillet, add sliced mushrooms and bell peppers, stirring occasionally. Cook over medium heat for about 5 minutes until vegetables are tender.
  • Stir in 2 cloves of minced garlic and 1 teaspoon of dried thyme; cook for another minute until garlic is fragrant.
  • Return cooked chicken to the skillet, pour in ¼ cup of chicken broth and 2 tablespoons of soy sauce, stirring to combine. Simmer gently for 3-4 minutes.
  • Taste and adjust seasoning with salt and pepper. Transfer to a serving dish and garnish with freshly chopped parsley. Serve warm over rice or noodles.

Notes

Prep vegetables and chicken ahead of time to save minutes during dinner prep. Make sure to sear the chicken properly for a golden crust. Adjust soy sauce and broth to taste, and always finish with fresh herbs for added flavor.
