Step-by-Step Instructions

  • In a large pot, add 2 tablespoons of olive oil and heat it over medium heat until shimmering.
  • Carefully add 1 pound of cubed lamb to the pot and sear for about 5-7 minutes until browned on all sides.
  • Stir in 2 diced onions and 3 chopped carrots. Cook for another 5-7 minutes until the onions are translucent.
  • Add a can of diced tomatoes and 2 cups of broth, along with 2 teaspoons of ground cumin, 1 teaspoon each of ground cinnamon, ground ginger, turmeric, and paprika, plus salt and pepper to taste. Stir well.
  • Bring to a gentle simmer. Lower heat and cover the pot, cooking for about 1 hour, stirring occasionally.
  • Once the lamb is fork-tender, remove from heat and serve hot, garnished with fresh cilantro.
