  • 1 pound pork tenderloin the star of the dish
  • 2 tablespoons olive oil for searing

Step-by-Step Instructions

  • Preheat your oven to 400°F (200°C).
  • In a small bowl, combine maple syrup, Dijon mustard, soy sauce, minced garlic, thyme leaves, black pepper, and salt. Whisk until blended.
  • Place the pork tenderloin in a resealable plastic bag and pour the marinade over it. Seal and refrigerate for at least 30 minutes or up to 4 hours.
  • Remove pork from the bag and reserve the marinade. Pat the pork dry with paper towels.
  • Heat olive oil in a large oven-safe skillet over medium-high heat until shimmering.
  • Sear the pork tenderloin for about 3–4 minutes on each side until golden brown.
  • Pour the reserved marinade over the seared pork in the skillet.
  • Transfer the skillet to the preheated oven and roast for 15–20 minutes, until the internal temperature reaches 145°F (63°C).
  • Let the pork rest for 5–10 minutes before slicing.
  • Slice the pork tenderloin into medallions and garnish with fresh thyme sprigs if desired.

Notes

For a less sweet dish, decrease maple syrup and add more Dijon mustard for balance.
