  • 3 cups beef (chuck) well-marbled chunks
  • 1 tablespoon flour or cornstarch for gluten-free
  • 3 tablespoons curry powder
  • 1 tablespoon soy sauce consider low-sodium

For the Veggies

  • 2 medium carrots chopped
  • 2 medium potatoes diced

For Simmering

  • 4-6 cups water adjust for desired consistency

Cooking Steps

  • Gradually add water, stirring to avoid clumps.
  • Return browned beef to the pot; let simmer for 60 minutes.
  • Add chopped carrots and diced potatoes; simmer for an additional 30 minutes.
  • Adjust seasoning and serve the curry in bowls.
