Step-by-Step Instructions for Chilli Con Carne

  • Heat 2 tablespoons of oil in a large pot over medium heat. Add the chopped onion and red bell pepper, sautéing for about 5 minutes until softened.
  • Add 2 cloves of minced garlic and 1 pound of ground beef to the pot. Cook for about 7-10 minutes until browned.
  • Stir in 2 tablespoons of chili powder, 1 teaspoon of ground cumin, 1 teaspoon of smoked paprika, ½ teaspoon of cayenne pepper, and 1 teaspoon of salt. Cook for an additional 1-2 minutes.
  • Add 2 cups of diced tomatoes, 1 can of kidney beans, 1 can of black beans, 1 tablespoon of tomato paste, and 1 cup of beef broth to the pot. Stir to combine.
  • Bring to a simmer over medium-high heat, then reduce to low. Cover and cook for 1 hour, stirring occasionally.
