  • Begin by bringing a large pot of salted water to a rolling boil over high heat. Once boiling, add the 400 grams of pasta and cook according to package instructions until al dente, usually around 8-10 minutes. Reserve 1 cup of the pasta cooking water before draining the pasta and setting it aside.
  • While the pasta is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat. Once the oil is shimmering, add the thinly sliced onions and sprinkle them with 1 teaspoon of salt. Sauté the onions for about 10 minutes, stirring occasionally until they start to soften.
  • Add 1 teaspoon of sugar to the softened onions and continue to cook, stirring frequently, for an additional 15-20 minutes until the onions turn a deep golden brown.
  • In the last few minutes of cooking the onions, add 3 cloves of minced garlic to the skillet. Cook it for about 1-2 minutes until the garlic becomes fragrant.
