Step-by-Step Instructions for Budae Jjigae

  • Combine broth ingredients: In a large pot, pour in 4 cups of water and add 1 cup of kimchi along with 1 cup of cubed tofu. Set the heat to medium and bring this mixture to a gentle boil, which should take around 5–7 minutes.
  • Add meaty ingredients: Once the broth is boiling, add 1 cup of diced spam and 1 cup of sliced hot dogs to the pot. Stir the ingredients together and let the soup simmer for an additional 5 minutes.
  • Season the stew: Stir in 1 tablespoon of gochujang, 1 tablespoon of gochugaru, and 1 tablespoon of soy sauce. Continue to simmer for about 10 minutes while stirring occasionally.
  • Taste and adjust flavors: After simmering, taste your Budae Jjigae. If you crave more heat, adjust the spice levels by adding more gochujang or gochugaru and simmer for another 2–3 minutes.

Notes

Use quality kimchi for the best taste. Feel free to switch out proteins like chicken or seafood. Serve with steamed rice or pickled vegetables.
