  • In a large pot, bring salted water to a rolling boil over high heat. Add the diced potatoes and cook them for 10-12 minutes until they are fork-tender. Drain the potatoes and set them aside.
  • Using the same pot, fill it again with water and bring it back to a boil. Add the broccoli florets and steam for 3-4 minutes until they are tender-crisp. Drain the broccoli and set aside.
  • In a large skillet, heat olive oil over medium heat. Once the oil shimmers, add the minced garlic and sauté for about 30 seconds until fragrant.
  • Add the drained potatoes and broccoli to the skillet. Season with salt and black pepper, then drizzle in lemon juice. Toss gently to coat, heating through for about 3-4 minutes.
  • Serve the mixture warm, garnished with grated Parmesan and freshly chopped parsley.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months. Reheat gently to avoid overcooking the broccoli.
