Braised Short Ribs Preparation

  • Preheat your oven to 325°F (160°C). Season the short ribs generously with salt and pepper.
  • In a large Dutch oven, heat olive oil over medium-high heat. Sear the short ribs on all sides until browned, about 3-4 minutes per side.
  • Sauté chopped onion, carrots, celery, and minced garlic for 5-7 minutes until fragrant.
  • Stir in beef broth, red wine, tomato paste, Worcestershire sauce, thyme, and bay leaves. Bring to a gentle simmer.
  • Return short ribs to the pot and cover tightly. Braise in the oven for 2.5 to 3 hours.
  • While ribs are braising, boil peeled potatoes in salted water until fork-tender, about 15 minutes. Drain and keep warm.
  • Mash cooked potatoes with heavy cream and butter until smooth. Season with salt to taste.
