Step-by-Step Instructions

  • Rinse the rice under cold water in a fine mesh strainer until the water runs clear. Drain and set aside.
  • Heat olive oil in a large skillet over medium heat. Add the sliced smoked sausage and cook until browned, about 5–7 minutes.
  • Stir in the chopped onion and bell pepper. Cook for 3–4 minutes until the vegetables soften.
  • Add minced garlic, paprika, cumin, and chili powder. Cook for 1–2 minutes until fragrant.
  • Mix in the rinsed rice, ensuring it's well-coated with the oil and spices.
  • Pour in the chicken broth and bring to a boil. Then reduce heat to low and simmer for about 15 minutes until the rice is tender.
  • Remove from heat and gently fold in the black beans. Cover and let it rest for 5 minutes.
  • Season with salt and pepper to taste and serve warm, garnished with cilantro if desired.
