Step-by-Step Instructions for Beef Tagine

  • In a large pot or tagine, heat 2 tablespoons of olive oil over medium heat. Add 1 medium chopped onion and sauté until translucent, about 5-7 minutes.
  • Add 2 pounds of beef chuck to the pot. Increase heat slightly and brown the beef on all sides for 6-8 minutes.
  • Stir in 1 teaspoon each of ground cinnamon, cumin, ginger, paprika, turmeric, and ½ teaspoon of black pepper. Cook for an additional minute.
  • Pour in 1 cup of beef broth while scraping the bottom of the pot to lift any browned bits, then add 1 cup each of sliced carrots, cubed potatoes, raisins, halved dried apricots, drained and rinsed chickpeas, and diced tomatoes. Stir well to combine.
  • Cover with a lid and reduce heat to low. Let it simmer for 2 hours, stirring occasionally.
  • Once cooked, remove from heat and let rest briefly before serving. Serve with couscous or crusty bread.
