Preheat your oven to 350°F (175°C).
Dredge each beef shank in flour, shaking off excess.
In a large Dutch oven, heat olive oil and sear the beef shanks for 3-4 minutes on each side.
Sauté chopped onion, carrot, and celery in the remaining oil for 5-7 minutes.
Deglaze the pot with white wine, scraping browned bits, and let simmer for 2 minutes.
Return beef shanks to the pot and add beef broth, salt, black pepper, thyme, and rosemary. Bring to a boil.
Cover and braise in the oven for about 2 hours, checking occasionally.
Remove from oven, let sit for 5-10 minutes and garnish with parsley before serving.
Notes
Pair with creamy risotto or crusty bread for a complete meal.
