Ingredients
  

For the Beef Shanks

  • 4 pieces Bone-in beef shanks

For Dredging

  • ½ cup Flour

For Searing

  • 3 tablespoons Olive oil

For the Aromatics

  • 1 medium Onion
  • 1 medium Carrot
  • 1 stalk Celery stalk

For Cooking Liquid

  • 1 cup White wine Use a dry varietal
  • 2 cups Beef broth

For Seasoning

  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Fresh thyme
  • 1 tablespoon Fresh rosemary
  • 2 tablespoons Fresh parsley Chopped for garnish

Cooking Instructions

  • Preheat your oven to 350°F (175°C).
  • Dredge each beef shank in flour, shaking off excess.
  • In a large Dutch oven, heat olive oil and sear the beef shanks for 3-4 minutes on each side.
  • Sauté chopped onion, carrot, and celery in the remaining oil for 5-7 minutes.
  • Deglaze the pot with white wine, scraping browned bits, and let simmer for 2 minutes.
  • Return beef shanks to the pot and add beef broth, salt, black pepper, thyme, and rosemary. Bring to a boil.
  • Cover and braise in the oven for about 2 hours, checking occasionally.
  • Remove from oven, let sit for 5-10 minutes and garnish with parsley before serving.

Notes

Pair with creamy risotto or crusty bread for a complete meal.
