Ingredients
  

Tortilla Base

Chicken Filling

  • 1 cup cooked chicken breast shredded
  • ¼ cup plain Greek yogurt
  • 2 tablespoon ranch dressing light or regular

Cheese Blend

  • ¼ cup shredded sharp cheddar cheese

Seasoning

  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon smoked paprika or regular paprika
  • ¼ teaspoon dried dill or Italian seasoning, optional
  • teaspoon salt or to taste
  • teaspoon black pepper

Cooking

  • 1-2 teaspoon olive oil or avocado oil

Preparation Steps

  • Prepare the chicken by shredding or dicing it. For fresh chicken, season and cook over medium heat for 6–7 minutes until cooked through.
  • Make the filling by whisking Greek yogurt and ranch dressing. Add seasonings and mix with the chicken.
  • Add chopped vegetables to the filling and stir until combined.
  • Mix the cheeses in a bowl until evenly blended.
  • Assemble the quesadillas by layering cheese, filling, and more cheese, then folding the tortillas.
  • Heat oil in a skillet and cook the quesadillas for 2–3 minutes on each side until golden brown and cheese is melted.
  • Slice quesadillas into wedges and serve with garnishes like ranch dressing or salsa.

Notes

For more flavor, use rotisserie chicken or adjust veggies based on preference. Let quesadillas rest before cutting for best presentation.
