  • 3 ripe plantains natural sweetness balances the shrimp

For the Shrimp

  • 1 lb shrimp peeled and deveined
  • ½ cup garlic minced for aromatic goodness
  • Salt to taste
  • Pepper to taste

Preparation Steps

  • Peel the ripe plantains and cut them into one-inch chunks. Boil in water for about 15-20 minutes until tender.
  • Drain the plantains and mash them until smooth in a mixing bowl.
  • Heat olive oil in a skillet over medium heat. Sauté minced garlic for 1-2 minutes until fragrant.
  • Add shrimp, season with salt and pepper, and cook for 3-4 minutes until pink and cooked through.
  • Pour in chicken broth and stir to combine. Let simmer for a minute.
  • Mix the shrimp and garlic mixture into the mashed plantains thoroughly for flavor.
  • Serve by forming the mofongo on a plate and topping with the shrimp mixture.
