Cooking Steps

  • Preheat your oven to 400°F (200°C).
  • Wash and scrub the medium-sized potatoes under cold water, then dry them and slice into thick wedges.
  • In a large mixing bowl, add the potato wedges and drizzle with olive oil. Sprinkle garlic powder, dried oregano, salt, and pepper. Toss well to coat.
  • Transfer the seasoned potato wedges to a baking sheet lined with parchment paper, spreading them in a single layer.
  • Crumble the feta cheese evenly over the potato wedges.
  • Bake in the preheated oven for 30-35 minutes until golden brown and tender.
  • Remove from the oven and let cool for about 5 minutes before serving.
  • Garnish with fresh parsley and serve with lemon wedges on the side.

Notes

Store cooled baked feta potatoes in an airtight container in the fridge for up to 3 days, or freeze for up to 2 months. Reheat in a preheated oven at 375°F (190°C) for 20-25 minutes.
