  • 2 tablespoons Soy sauce for savory depth

  • 1 teaspoon Sesame oil for nutty finish

Step-by-Step Instructions

  • Prepare the rice noodles according to package instructions, about 4–6 minutes. Drain and set aside.
  • In a pot, heat vegetable oil over medium heat. Sauté chopped onion for 3–4 minutes until softened.
  • Add minced garlic and grated ginger. Cook for 1–2 minutes until fragrant.
  • Incorporate julienned carrot and sliced bell pepper. Cook for 5 minutes until they soften.
  • Pour in vegetable broth, bring to a gentle boil, then reduce heat and simmer for 5 minutes.
  • Stir in coconut milk and peanut butter, whisking until creamy.
  • Season with soy sauce, lime juice, sesame oil, salt, and pepper. Simmer for 5–10 minutes.
  • Fold in the cooked noodles, heat through for a couple of minutes.
  • Serve hot, garnished with cilantro or green onions and crushed peanuts if desired.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat gently. For freezing, store soup without noodles to maintain texture.
