For the Creamy Tzatziki

  • 1 cup Greek yogurt base for the sauce
  • 1 small cucumber grated and squeezed
  • 2 cloves garlic minced for flavor

  • 1 tablespoon white vinegar for zest
  • 1 tablespoon fresh dill infuses herbiness

Instructions
 

Marinating & Cooking

  • Marinate the chicken thighs with olive oil, oregano, garlic powder, paprika, salt, and pepper. Refrigerate for at least 30 minutes.
  • Prepare the tzatziki sauce by mixing Greek yogurt, grated cucumber, minced garlic, olive oil, white vinegar, dill, salt, and pepper. Refrigerate until serving.
  • Cook marinated chicken on a grill or skillet over medium-high heat for 5-7 minutes on each side, until fully cooked. Let rest and slice.
  • Assemble the bowls with basmati rice, sliced chicken, tomatoes, cucumber, feta, and onion.
  • Drizzle tzatziki over the bowls and garnish with parsley before serving.
