  • Start by neatly chopping all your bell peppers and dicing the onion. Mince the garlic cloves, and cut the chicken thighs into bite-sized pieces.
  • Preheat your Blackstone griddle to medium heat. Add the bacon slices, allowing them to sizzle and cook until they are crisp, about 5-7 minutes.
  • In the same griddle with residual bacon grease, add the diced chicken thighs seasoned lightly with salt and pepper. Cook for 6-8 minutes until golden brown, adding minced garlic in the final minute.
  • Toss in the diced onion and chopped bell peppers onto the griddle and sauté for about 3-4 minutes until they soften.
  • Lower the heat slightly, mix in the cream cheese and ranch seasoning, stirring until the cream cheese has melted.
  • Crumble the cooked bacon back into the skillet and pour in about ¼ cup of chicken broth, stirring to mix all flavors.
  • Sprinkle the shredded cheese evenly over the top and stir until it melts into the mixture.
  • Remove from heat, sprinkle freshly chopped parsley on top, and serve immediately.
