  • Pat the cod fillets dry with paper towels, ensuring they are moisture-free for a perfect sear. Season both sides generously with salt and pepper, creating a flavorful base.
  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat until shimmering. Add the seasoned cod fillets and cook for about 3-4 minutes on each side until golden brown and cooked through. Remove and set aside.
  • In the same skillet, add 2 cups of halved cherry tomatoes. Cook for 2-3 minutes until they start to soften and release their juices.
