  • In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 4 pieces of chicken thighs, cooking each side for about 5-7 minutes until browned. Remove the thighs and set aside.
  • In the same skillet, add 1 cup of chopped onion and 1 teaspoon of minced garlic. Sauté for 3-4 minutes until onions are translucent and fragrant.
  • Sprinkle 1 tablespoon of all-purpose flour over the onion and garlic mixture, stirring continuously for about 1 minute. Gradually add 1 cup of chicken broth, whisking well to prevent lumps.
  • Return the browned chicken thighs to the skillet. Cover and reduce heat to low, allowing to simmer gently for about 30 minutes.
  • While the chicken simmers, boil water in a separate pot and add peeled and cubed potatoes with 1 teaspoon of salt. Cook for 15-20 minutes or until fork-tender. Drain and return potatoes to the pot.
