Step-by-Step Instructions

  • In a mixing bowl, combine ground beef, breadcrumbs, egg, chopped onion, garlic powder, salt, and black pepper. Mix until just incorporated.
  • Shape the mixture into 16 meatballs, each about 1½ inches in diameter.
  • Heat olive oil in a large skillet over medium heat. Add meatballs and sear for 6–8 minutes until browned on all sides.
  • Pour barbecue sauce over meatballs, reduce heat to low and simmer for about 5 minutes.
  • In a blender, combine avocado, Greek yogurt, mayonnaise, cilantro, lime juice, minced garlic, and water. Blend until smooth.
  • Divide cooked rice among four bowls. Top each with corn, black beans, red onion, and avocado. Place meatballs on top.
  • Drizzle Avocado Goddess Sauce over each bowl and garnish with additional cilantro if desired.
