  • In a small saucepan over medium heat, melt ½ cup of unsalted butter, stirring constantly until golden brown, about 5-7 minutes.
  • In a large mixing bowl, combine the browned butter with 1 cup of granulated sugar, add in 1 large egg and 1 teaspoon of vanilla extract, whisk until smooth. Fold in 3 mashed ripe bananas.
  • In a separate bowl, whisk together 1 ½ cups of all-purpose flour, ½ teaspoon of baking soda, ½ teaspoon of baking powder, ½ teaspoon of salt, and 1 teaspoon of ground cinnamon.
  • Gradually add the dry ingredients to the banana mixture, stirring gently with a spatula until just combined.
  • Fold in ½ cup of brown sugar until evenly distributed throughout the batter.
  • Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan. Optionally, place dollops of sugar cookie dough on top.
  • Pour the batter into the prepared loaf pan and smooth out the top. Bake for 50-60 minutes, until a toothpick comes out clean.
  • Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
