  • 2 medium raw beets grated
  • 2 medium carrots peeled and grated
  • 1 large crisp apple e.g., Granny Smith or Fuji

For the Dressing

  • 2 tablespoon fresh lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon honey or maple syrup
  • ¼ teaspoon salt
  • teaspoon black pepper

For Garnish

  • ¼ cup walnuts or sunflower seeds
  • fresh parsley or mint for topping

Preparation Steps

  • Peel and grate the raw beets and carrots into a large mixing bowl.
