Step-by-Step Instructions

  • Preheat your oven to 375°F (190°C).
  • Rinse sushi rice under cold water until clear, then combine with water and bring to a boil. Reduce heat and simmer for 18-20 minutes.
  • Mix rice vinegar, sugar, and salt in a bowl until dissolved. Stir into cooked rice and let cool.
  • Slice avocado into thin wedges or small cubes.
  • Shape cooled rice into small bite-sized squares on a parchment-lined baking sheet.
  • Top each rice square with flaked salmon followed by a piece of avocado.
  • Bake the assembled bites for about 10 minutes.
  • Remove from oven and serve warm or at room temperature.

Notes

Enjoy at room temperature for up to 2 hours. Store in the fridge for up to 3 days and freeze for up to 1 month.
