Preparation Steps

  • Preheat your oven to 400°F (200°C). Slice the eggplant into ½-inch thick rounds and arrange on a baking sheet lined with parchment paper. Drizzle with olive oil and set aside.
  • In a small bowl, combine miso paste, soy sauce, maple syrup, and sesame oil. Whisk until smooth.
  • Coat each side of the eggplant slices with the miso glaze and arrange them back on the baking sheet.
  • Roast in the oven for 25–30 minutes, flipping halfway through.
  • Remove from oven, let sit, and garnish with sesame seeds and chopped green onions before serving.

Notes

Choose quality eggplants and avoid excess moisture for the best results. Adjust sweetness based on miso saltiness for a balanced flavor.
