  • In a large mixing bowl, whisk together 2 cups of all-purpose flour, ½ cup granulated sugar, 1 tablespoon baking powder, ½ teaspoon salt, ½ teaspoon cinnamon, and ¼ teaspoon nutmeg until evenly mixed.
  • In a separate bowl, combine ½ cup milk, 2 large eggs, 1 teaspoon vanilla extract, and ¼ cup melted butter. Pour the wet ingredients into the dry ingredients, stirring gently until just combined.
  • Heat oil in a deep fryer or heavy pot to 350°F (175°C). Carefully drop spoonfuls of the batter into the oil, frying for about 2-3 minutes on each side until golden brown. Drain on paper towels.
  • In a medium saucepan, combine 1 cup heavy cream and 1 teaspoon vanilla extract. In a bowl, whisk together 6 large egg yolks and ¼ cup brown sugar. Gradually add warm cream mixture while whisking continuously. Return to saucepan and cook over low heat until thickened.
