  • 2 whole jalapeños adjust based on spice preference

  • 4 cloves garlic minced
  • 1 whole onion diced

Step-by-Step Instructions for Chili Verde

  • Preheat a large pot over medium heat and add 1 tablespoon of olive oil.
  • Season 1 pound of pork shoulder with salt and black pepper, then sear in the pot for 8-10 minutes.
  • Remove the meat, then sauté onion, garlic, and jalapeños for 5-7 minutes until softened.
  • Add tomatillos and cilantro to the pot and cook for 3-4 minutes until softened.
  • Return the meat to the pot, stir well, cover, and simmer on low for 1 hour.
  • Check tenderness and thickness of sauce; serve hot over rice or with tortillas.

Notes

For a twist, add a squeeze of lime juice before serving. Leftovers can be refrigerated for up to 3 days or frozen for 3 months.
