  • In a medium skillet, heat 2 tablespoons of oil over medium heat for about 1-2 minutes until it shimmers.
  • Season 1 cup of diced chicken with ½ teaspoon salt, ½ teaspoon black pepper, and ½ teaspoon garlic powder. Add the chicken to the hot skillet and cook for 5-7 minutes.
  • Add 1 cup of mixed vegetables to the pan and sauté for an additional 3-5 minutes.
