  • ½ cup Shredded cheddar cheese to melt beautifully on top

Step-by-Step Instructions

  • Preheat your oven to 400°F (200°C).
  • Wash and dry each sweet potato thoroughly. Rub with olive oil and place on a baking sheet lined with parchment paper.
  • Bake the sweet potatoes for 45-60 minutes until tender. A fork should easily pierce the flesh.
  • Remove the sweet potatoes from the oven and let cool for about 10 minutes.
  • Slice each potato in half lengthwise and scoop out most of the flesh, leaving a small border.
  • In a mixing bowl, combine the scooped sweet potato flesh with softened butter, sour cream, milk, salt, black pepper, cinnamon, and nutmeg. Mash until smooth and creamy.
  • Stir in the shredded cheddar cheese and chopped green onions. If using, fold in the crumbled bacon.
  • Spoon the creamy mixture back into each potato half, mounding it slightly.
  • Return the stuffed sweet potatoes to the baking sheet and bake for an additional 15-20 minutes until the tops are lightly browned.
  • Remove from the oven and let cool slightly before serving, garnished with extra green onions or bacon if desired.

Notes

For best results, select medium-sized sweet potatoes and ensure to test their tenderness during baking.
