Ingredients
  

For the Chicken

  • 1 ½ pounds boneless, skinless chicken thighs

For the Teriyaki Sauce

  • cup soy sauce
  • ¼ cup water
  • 2 tablespoons honey
  • 1 tablespoon brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger

For Thickening

  • 2 tablespoons cornstarch
  • 2 tablespoons water for slurry

For Serving

  • 4 cups steamed rice
  • 2 cups chopped vegetables like broccoli, bell peppers, and carrots
  • 1 tablespoon vegetable oil for sautéing
  • 2 tablespoons toasted sesame seeds for garnish
  • 4 sliced green onions for garnish

Instructions
 

Preparation

  • In a bowl, whisk together soy sauce, water, honey, brown sugar, rice vinegar, sesame oil, minced garlic, and minced ginger to prepare the teriyaki sauce. Set aside.
  • Slice the chicken thighs into bite-sized pieces.
  • Heat vegetable oil in a large pan over medium-high heat and cook the chicken pieces until browned and fully cooked.
  • Steam the chopped vegetables until tender but still vibrant.
  • Combine the cooked chicken with the teriyaki sauce in the pan and simmer to blend flavors.
  • Mix cornstarch with water to create a slurry and add it to the chicken mixture, cooking until the sauce thickens.
  • Sauté the steamed vegetables in another pan until heated and slightly caramelized.
  • Assemble bowls by placing steamed rice at the base, topping it with the chicken and teriyaki sauce mixture, and arranging the sautéed vegetables on the side.
  • Garnish each bowl with sesame seeds and sliced green onions before serving.

Notes

Marinating the chicken enhances the flavor. Cut chicken and vegetables into uniform pieces for even cooking. Add garnishes just before serving for freshness.
