Step-by-Step Instructions

  • Preheat your oven to 325°F (160°C).
  • In a medium saucepan, combine 2 cups of heavy cream and 1 cup of pumpkin puree. Heat over medium heat until just simmering.
  • In a large mixing bowl, whisk together 6 egg yolks, ½ cup of granulated sugar, 1 teaspoon of vanilla extract, ½ teaspoon of ground cinnamon, ¼ teaspoon of ground nutmeg, ¼ teaspoon of ground ginger, and ¼ teaspoon of salt until smooth.
  • Gradually whisk the warm pumpkin cream into the egg yolk mixture to combine.
  • Pour the custard through a fine-mesh sieve into a large measuring cup or bowl.
  • Divide the custard among six ramekins and place them in a baking dish with hot water reaching halfway up the sides.
  • Bake for 30-35 minutes until edges are set and centers jiggle slightly.
  • Remove ramekins from the water bath, let cool to room temperature, then refrigerate for at least 4 hours or overnight.
  • Just before serving, sprinkle a thin layer of granulated sugar over each custard and caramelize with a kitchen torch.

Notes

For best results, use freshly ground spices and chill the custard well before serving.
